Ingredients:
1 package of frozen puff pastry sheets
1 beaten egg + 1 tablespoon of water for egg wash
Fillings:
Smoked ham, finely chopped (you can
do a few pulses in the food processor)
Mozzarella / Gruyere / Gouda /
Cheddar or any good melting cheese, shredded
Mix of ricotta, shredded feta
cheese and wilted spinach
Preparation:
Roll the thawed puff pastry sheet onto a floured surface and
cut into squares.
Lightly brush the borders of each square with the egg wash.
Drop a spoonful of the filling onto each square and fold in
half, or crosswise, or cover with another square.
You can do different shapes
for the different fillings(squares, triangles, rectangles).
Crimp tightly all
along the edge where the two sheets come together.
Transfer each turnover to a parchment-lined baking sheet or
silicon mat, keeping them 1” apart.
Refrigerate while the oven preheats to 450F.
Brush the tops with egg wash and bake for 15-20 minutes,
until golden and puffed.
Let it cool for 15 minutes as the fillings will be hot, and
enjoy!
Note: You can prepare the turnovers in advance and keep them
in your freezer for a couple of weeks, stored in Ziplock bags. Let them thaw on
the counter while the oven is preheating. Brush with egg wash and bake as per
the instructions.
These savory turnovers are perfect for grabbing breakfast on
the go.
