Ingredients: (2 servings)
1 medium onion, finely chopped
2-3 garlic cloves, minced
½ red bell Pepper, finely chopped
¼ cup white wine
½ cup canned crushed tomatoes / passata / strained
tomatoes
½ cup rice
3 cups shrimp stock
Seafood: shrimp, squid rings, clams, mussels, crab
meat
A few drops of piri piri sauce or any hot sauce
A handful of chopped cilantro
Preparation:
In a pot with olive oil, sauté the onions, garlic and bell
peppers. Add the white wine and let it evaporate. Add the crushed tomatoes and
the rice, stir well.
Add 2 cups of stock, stir, cover and let it simmer for 15
minutes.
Add the seafood, hot sauce, cilantro, and more stock if
necessary. Cover and let it simmer for a few more minutes until rice is tender
but without absorbing all the stock. This dish will have a “soupy” consistency.
Enjoy with a glass of dry White Wine or a glass of Portuguese Green Wine! Disfuten!!
