Caramelized Onions:
Ingredients:
1 pound yellow or white onions,
sliced
2-3 tablespoons of butter (enough to
cover the pan)
Dash of olive oil
Salt
Lots of patience!
Preparation:
Heat a sauté pan, add the oil and butter until melted and then add the sliced onions, toss to cover with butter and sprinkle with salt, to prevent the onions from browning.
Lower heat to medium-low and continue
cooking the onions, stirring occasionally, for 45 minutes to an hour, until
fully browned. For reference, the pictures were taken 10 minutes apart.
The preparation will reduce
substantially, each raw onion will give you about a tablespoon of caramelized
onion.
You can use the caramelized onions in
burgers, pizza, onion soup, onion dip, or our favorite: French onion grilled
cheese sandwich.
French Onion Grilled Cheese Sandwich
Ingredients (for 2 sandwiches):
4 tablespoons caramelized onions
4 slices of bread (check out our
white bread recipe)
1 cup grated Gruyere (preferably) or
a mixture of good melting cheese such as Provolone, Mozzarella, Cheddar, etc.
Butter
Dijon mustard (optional)
Preparation:
Spread butter on both sides of the
bread slices. Top with cheese, onion and cheese. Spread one side with Dijon
mustard (optional).
Close the sandwiches and place on a hot panini press or
sauté pan for a few minutes until golden brown on both sides. Be careful as the
filling will be very hot! Disfruten!
